Flavour and Texture

Zeronimo is the premium non-alcoholic wine brand of Heribert Bayer, an Austrian family winery run by second-generation winemakers Patrick and Katja Bayer. Their approach starts with carefully selected Austrian wines, allowing vineyard origins, traditional winemaking and patient ageing to shape the finished drink. Alcohol removal comes after the wine has developed, preserving a connection to the grapes and maturation behind each release.

Old-Vine Grapes and French Oak Ageing

Zeronimo Leonis Blend 2022 is an oak-aged non-alcoholic red wine from Mittelburgenland, Austria. Made with 60% Blaufränkisch, 20% Zweigelt and 20% Cabernet Sauvignon, it draws on grapes from vines more than 80 years old in the Neckenmarkter Hochberg vineyard. Its foundation is Heribert Bayer’s Cuvée In Signo Leonis, a wine awarded 98 points by Falstaff before dealcoholization. The wine matures for 24 months in new French oak barriques before the alcohol is gently removed.

About Zeronimo

Juicy cherry and wild berries meet bergamot and orange zest, followed by nougat, black tea and oak spice. The texture is silky, with gently integrated tannins, refreshing acidity and a dry finish. Two years of barrel ageing bring oak seasoning to the fruit, while the blend retains the tart, savoury qualities that make red wine such a useful companion at the dinner table.

The 2022 Vintage

The 2022 release is Zeronimo’s third Leonis vintage. Its distinction comes from the combination of old-vine Austrian grapes, an acclaimed base wine and extended French oak maturation. This premium dealcoholized red wine is vegan and contains 0.2% ABV.

Serving and Food Pairings

Serve at 14–16°C in a Burgundy glass. Pair with grilled vegetables, roasted meats, mushroom dishes or tomato-based Mediterranean cooking, where its fruit, acidity and oak spice can complement roasted and savoury flavours.
